Most important is getting solid research experience as an undergrad. It will make grad school easier and make it easier to do self-directed study during your final semester of college. If you can, spend the first semester of your senior year writing your thesis, and then spend the second semester preparing for the work world or graduate school. It will give you a less stressful period of time to do this in.
Qualitative and Quantitative analysis are generally required subjects for receiving a degree in Anthropology or Sociology. If you have a good professor and access to solid professional software such as SPSS, you will likely be able to do graduate work starting sophmore or junior year of college. If you can do this, it will make for an easier entrance into the grad world or defining your own work as an independent researcher or worker.
